Carrot-Egg Poriyal (Carrot Poriyal)

  • 3 Carrots (Scarped)
  • 2 Eggs
  • 3 Green Chillies
  • 1/4 Cup Small Onions (Chopped)
  • 1/2 Table Spoon Urad Dal
  • 1/2 Table Spoon Bengal Gram
  • 1/2 Table Spoon Mustard Seed
  • Few Curry Leaves
  • Salt as per the requirement
  • Oil
  • Heat the 3 table spoon of oil in a pan, when its become hot, add mustard seeds, urad dal, bengal gram dal
  • Once the contents are fried, add chopped onions, green chilles & few curry leaves, fry it for a minute. Add scarped carrot and fry it
  • Add required amount of salt and pour some water, stir it well. Cook it in a medium flame. Stir it every 2 minutes
  • After 15 minutes (when the water are absorbed), add 2 eggs and stir it well for 5 minutes.
  • Your Egg Carrot Poriyal is ready to serve.
