Rava Kesari

  • 1 Cup of White Rava
  • 1 1/2 to 2 Cups of Sugar
  • 5-6 Peeled Cardamom Pods (Powder)
  • 15-20 Cashew Nuts
  • 15-20 Raisins
  • 3/4 Cup of Ghee
  • A Pinch of Kesari Food Color
  • 1/2 Cup of Milk (boiled)
  • 3 Cups of Water

  • Heat 1 table spoon of ghee in a thick bottomed wide pan, fry the cashew nuts and raisins in a low flame till it turns golden brown color and keep them aside.
  • Add another table spoon of ghee in the same pan and fry the white rava in a medium flame until the smell of rava leaves
  • In the same pan heat 3 cups of water, when it comes to a boiling stage add a pinch of kesari food color
  • Add the rava slowly, and stir well without forming lumps (Stir it constantly)
  • Cook the rave well at medium heat.
  • When it is fully cooked, add the sugar slowly and stir well without forming lumps. (Stir it constantly)
  • When it become thick paste, add the boiled milk, stir well
  • In a semi solid state add ghee. Keep stirring until the rava will become thick (it starts leaving the sides of the pan)
  • Finally add cardamom powder, cashew nuts & raisins.
  • Now you can serve this hot & heart melting sweet Kesari.
